NOTE: 1 kg Pare mentah setelah matang jadi sekitar 750-800 gr kg Keripik Pare
BAHAN
2-3 buah pare kualitas bagus [Berat sekitar 1 kg sebelum diiris], jika sudah diiris dan dicuci dan direndam air panas [siap olah] berat total jadi sekitar separuhnya [sekitar 500 gr].
BAHAN TEPUNG UNTUK KERIPIK PARE [Untuk 500 gr Pare siap olah].
300 gr tepung beras
150 gr tepung tapioka
70-100 gr tepung terigu protein rendah atau sedang [Semakin banyak takaran terigu tekstur Keripik jadi empuk renyahnya]
1 butir telur
Air sekitar 430-450 ml [Semakin sedikit air semakin kental maka nantinya semakin tebal lapisan keripiknya, jadi sesuai selera]
1 sachet Royco [Bisa diganti dengan 1 sdt bubuk kaldu]
½ sdt. Bubuk kunyit, opsional
½ sdt bubuk kencur, opsional
5-10 lembar daun jeruk, iris halus atau bisa diganti dengan daun Bawang 5-10 batang, Rajang halus
BUMBU YANG DIHALUSKAN
5-7 siung bawang putih, sesuai selera
1 sdm garam
1 sdm Ketumbar
4 butir kemiri, fungsi Kemiri ini sebagai perenyah alami. Cara lain bisa menggunakan santan kental instan Kara sekitar 30 ml.

Crispy Bitter Gourd Fries

NOTE: 1 kg of raw Bitter gourd makes about 750-800 gr kg of Crispy Bitter Gourd Fries
INGREDIENTS
2-3 good quality bitter melon [bitter gourd]. It weighs about 1 kg before slicing, but if it has been sliced and washed and soaked with hot water [ready to process] the total weight will be around 500 gr.
FLOUR MIXTURE INGREDIENT [For 500 gr of ready-to-process bitter gourd].
300 gr of rice flour
150 gr tapioca flour
70-100 gr of low or medium-protein flour [The higher the amount of flour, the softer and crunchier the texture will be]
An egg
Water around 430-450 ml [The less water the thicker the fries will be]
1-2 tsp. of broth powder
½ tsp. Turmeric powder, optional
½ tsp. of Kaempferia galangal powder, optional
5-10 Kaffir lime leaves, finely sliced or can be replaced with 5-10 sticks of onion leaves, finely chopped
GROUND SPICES
5-7 garlic cloves, according to taste
1 tablespoon salt
1 tbsp. Coriander
4 candle nuts, the function of this ingredient is as a natural crisper. We may replace it with 30 ml thick coconut milk.
